One of my guilty pleasures are Mother's Circus Animal Cookies. I love these cookies so much and have no problem eating a bag to myself. I just avoid buying them now, but had to make an exception to make a batch of this Circus Animal Cookie Bark!

Mother's are the classic, original Circus Animal Cookies. No other brand compares and these ones taste just like I remember from my childhood.

This bark was such a fun treat to share with my girls! They weren't home while I made and photographed it, but this would be a great recipe for any kid to help with.

Hazel would love to do the sprinkles and cookies and Ella could help melt and spread the candy.

These can be served at a birthday party on a plate or platter or even packaged up in gift bags to take home. They would be a great seller at a bake sale too.

Circus Animal Cookie Bark

Ingredients

  • 1 - 12 ounce bag pink candy melts
  • ½ cup white baking chips
  • 20 Mother's circus animal cookies
  • nonpareils sprinkles

Instructions

  1. Line a baking sheet with aluminum foil.
  2. Add the candy melts to a microwave safe bowl. Heat in 30 second intervals, mixing each time until the candy is melted and smooth.
  3. Pour onto the aluminum foil baking sheet and spread evenly, to about ¼” thickness.
  4. Immediately, pour the white baking chips into a bowl and heat in 30 second intervals, mixing each time until melted and smooth.
  5. Drizzle the melted white candy over the pink, immediately press cookies into the mixture and sprinkle with the nonpareils.
  6. Place in the refrigerator for about 1 hour to harden.
  7. Remove from the refrigerator, then cut or break into pieces around each cookie.

Notes

Store at room temperature in an airtight container for up to 5 days.
