These easy Air Fryer Carrot Tots are such a great way to get your kiddos to eat their vegetables. They're made with simple ingredients and are such a great, healthier alternative to store bought tater tots.
You can serve these carrot tots as a main dish or side dish. They're great for lunch, dinner or snack. Carrots are such a wonderful vegetable choice for kids. They're a good source of fiber, potassium, vitamin B6 and also contains some vitamin C.
I decided to make these carrot tots larger than store bought tater tots. I also made them round because it was less time consuming. You can defintely make them the traditional tot shape.
Each bite is cheesy with a touch of the garlic and onion flavors. I seasoned these for serving to little kiddos, so if you're an adult, you may need to add some extra seasoning or use a dipping sauce.

- panko breadcrumbs

Recipe tips:
- Store leftovers in an airtight container for up to three days. Reheat in an air fryer or microwave.
- Different brands of air fryers may heat differently, so cook time may need to be adjusted.
- I recommend using freshly shredded cheese for better taste and melting.
- Use a cheesecloth to squeeze the juice from the carrots. I squeeze mine into a glass and drink. Carrot juice is so tasty!
- I recommend using regular carrots and NOT baby carrots for this recipe. Regular carrots have way more flavor and a better texture.
